Hot cross buns - les brioches de Pâques / Easter hot cross buns

Hot cross buns
Les Hot cross buns sont des petites brioches anglaises à la cannelle et aux raisins secs que l'on déguste au moment de Pâques et notamment le Vendredi Saint, c'est la raison pour laquelle on retrouver des croix sur chaque brioche. Hyper moelleuses et savoureuses, il est difficile de résister à ces petites brioches surtout quand elle sont tièdes, avec un peu de beurre et de confiture rhubarbe-gingembre, so British!! Parfait pour un petit déjeuner, un brunch Pascal ou un goûter! 

Mon astuce: je vous conseille de les toaster dès le lendemain pour qu'ils restent moelleux, ils peuvent se conserver au moins 4 jours!

Ingrédients (pour 10 moyens ou 8 gros):
-550g de farine + 70g de farine
-30cl de lait + pour le glaçage
-125g de raisins Sultanine
-6cl d'eau
-55g de beurre froid
-55g de sucre roux + pour le glaçage
-1 œuf
-1,5 cuillères à café de sel
-1,5 cuillères à café de cannelle
-1/2 cuillère à café de 4 épices
-1/4 cuillère à café de noix de muscade
-1 sachet de levure de boulangerie
-huile neutre
Coupez en tout petits dés le beurre, placez-le dans la cuve de la machine à pain puis ajoutez y la farine (550g) et le sel. Sablez avec les doigts pour incorporer le beurre. Ajoutez le sucre roux, la cannelle, le 4 épices, la noix de muscade et la levure de boulangerie dans cet ordre.
Faites tiédir le lait puis ajoutez-y l’œuf battu et versez dans la cuve de la machine à pain. Mettez le mode pâte (environ 1h10).
Une fois le temps écoulé, dégazez la pâte et ajoutez-y les raisins secs. Divisez en 8 ou en 10 pâtons (selon votre préférence). Huilez un plat ou une plaque à pâtisserie puis placez-y les pâtons. Laissez lever dans un endroit chaud, couvert d'un torchon, pour au moins 30 minutes.
Préchauffez le four à 180°C.
Après la deuxième poussée, brossez avec un peu de lait et de sucre mélangés pour faire un glaçage. Préparez l'appareil pour les croix en mélangeant 70g de farine avec l'eau. Placez dans un sac alimentaire (type sac congélation) et coupez un tout petit bout de l'angle (attention il ne faut pas que ça coule trop vite) et dessinez des croix sur chaque pâton.
Enfournez pour 25 minutes puis laissez tiédir avant de servir et de vous régaler!!

Hot cross buns are typical British buns with cinnamon and raisins, that we usually have at Easter and Good Friday, that's the reason why there is a cross on each bun. Soft and tasty, it's hard to resist to this little treats, especially when they are warm, with a little butter and some rhubarb and ginger jam, so British!! Perfect for a nice breakfast, brunch or tea time!
My advice: you can toast them the following days, so they will stay soft, they are good for at least 4 days!

Ingredients (for 10 medium or 8 big):
-4,5 cups of flour + 1/2 cup
-1, 1/4 cups of milk + more for the icing
-4,5 oz. of Sultana raisins
-1/4 cup of water
-1/4 cup of cold butter
-1/2 cup of brown sugar + more for the icing
-1 egg
-1,5 teaspoons of salt
-1,5 teaspoon of cinnamon
-1/2 teaspoon of 4-spices
-1/4 teaspoon of nutmeg
-1 tablespoon of baker's yeast
-neutral oil
Cut the butter in small dice, put it in the bread machine and add the flour (4,5 cups) and the salt. Incorporate the butter into the flour like a crumble. Add the brown sugar, the cinnamon, the 4-spices, the nutmeg and the baker's yeast in this order.
Heat the milk, so it can be just warm, add the beaten egg and pour into the bread machine. Put the dough mode (about 1h10).
Once the time is over, remove the gas from the dough and add the raisins. Divide the dough into 8 or 10. Oil a dish or a baking tray and put the buns. Let it rise in a warm place, covered with a towel, for at least 30 minutes.
Preheat the oven at 350°F.
Brush the buns with a little bit of milk and sugar like an icing. Mix the rest of the flour and the water, put them in a pastry bag with a very small opening and make a cross on each bun.
Cook for 25 minutes and let it cool before you serve!!
