Coeur coulant au lemon curd
Le cœur coulant au chocolat fait parti de mes desserts préférés, j'en fait souvent et j'aime le prendre au restaurant! Ce petit dessert permet d'exalter toutes les subtilités du chocolat puisqu'il est sous la forme solide et liquide mais bon il n'y a pas que le chocolat dans la vie!! J'ai donc voulu changer et choisir un parfum qui est classique -le citron- mais que l'on a pas l'habitude de voir sous cette forme.
Ici le gâteau a un goût subtile de citron grâce aux zestes et le cœur qui coule est fait d'un délicieux lemon-curd acide juste comme il faut!! 
Ingrédients (pour 6 personnes):
-120g de beurre
-4 œufs
-60g d'amandes en poudre
-170g de sucre en poudre
-120g de farine
-10g de fécule de maïs 
-1/2 sachet de levure chimique
-2 citrons
Dans une casserole, faites fondre à feu doux le jus de deux citron et 50g de sucre. Augmentez légèrement le feu et ajoutez la fécule de maïs et deux œufs sans cesser de mélanger pour éviter que les œufs ne coagulent. Lorsque le mélange commence à épaissir, maintenez la cuisson pour 5 minutes supplémentaires tout en continuant de mélanger. Ôtez la casserole du feu et ajoutez 20g de beurre en morceaux puis laissez refroidir. Placez le lemon curd dans un bac à glaçons puis au congélateur pour au moins trois heures.
Préchauffez le four à 200°C. Dans un saladier, mélangez les œufs et le sucre jusqu'à ce que le mélange blanchisse. Ajoutez le beurre mou avec la farine, la poudre d'amandes, le zeste d'un citron et la levure et mélangez bien.
Remplissez au deux tiers vos moules (en silicone de préférence afin de pouvoir les démouler) puis placez au centre un cube de lemon curd glacé puis recouvrez du reste de la pâte. Enfournez pour 10 minutes et mangez aussitôt.

Chocolate volcano cake is one of my favourite desert I do it often and I often take it when I go to restaurants! This little desert heightens all the subtleties of the chocolate because it's both solid and liquid but well chocolate is not the only flavour out there!! I wanted to change and choose a flavour that is quite classic -lemon- even though we are not used to see it in this form. Here the cake has a subtle taste of lemon thanks to the zests and the melting heart is a delicious lemon-curd both acid and sweet!!
Ingredients (for 6 persons):
-1/2 cup of butter
-4 eggs
-1/2 cup of almond powder
-4/5 cup of sugar
-1 cup of flour
-1,5 tablespoons of corn starch
-1 teaspoon of baking powder
-2 lemons
In a sauce pan melt the juice of the lemons and 1/4 cup of sugar on a low heat. Raise the heat up a bit and add the corn starch and two eggs without stopping to whisk so that the eggs won't curdle. Once the batter starts to thicken let it cook for 5 more minutes without stopping to whisk. Than take the pan out of the heat and add 1/10 cup of butter in pieces while whisking. Put this lemon curd into an ice-tray than in the freezer for at least 3 hours.
Preheat the oven at 390°F. In a big bowl mix together the eggs and the sugar until the batter whitens. Add the soften butter with the flour, the almond powder, the zest of one lemon and the baking powder, mix well.
Fill 2/3 of the moulds (in silicone it's better to remove) than place a lemon curd ice-cube in the middle and cover with the rest of the batter. Put in the oven for 10 minutes and eat immediatly.
