Bundt cake au rhubarb curd et à la fraise
Le mercredi, c'est le jour des enfants et comment faire plaisir à vos petits cœurs et à vous par la même occasion?? En faisant un délicieux gâteau pour le goûter bien sûr!!
Je vous propose donc aujourd'hui une recette de Bundt cake (ou gâteau couronne), qui revêt des airs de printemps puisqu'il est à la rhubarbe -et plus exactement au rhubarb curd- et à la fraise Ciflorette. Ces deux fruits sont si délicieux cuisiné ensemble que j'ai du mal à résister!!
Ce Bundt cake est à la fois tendre et moelleux et tellement parfumé que vous ne saurez y résister!
Mon astuce: pour garder le moelleux de ce gâteau, laissez-le à température ambiante (en retirant les fraises fraîches) et en le couvrant de papier aluminium. Il se garde 5 jours.

Ingrédients (pour 8 à 10 personnes):
Pour le rhubarb curd:
-230g de rhubarbe
-130g de sucre
-110g de beurre
-4 œufs
Pour le bundt cake:
-360g de farine
-260g de sucre
-200g de fraises + 100g pour la décoration
-180g de beurre mou
-120g de yaourt à la Grecque
-3 œufs
-1 cuillère à soupe de levure chimique
-2 cuillères à café d'extrait de vanille liquide
-1 cuillère à café de sel
Commencez par le rhubarb curd en coupant la rhubarbe en tronçons d'environ 1cm. Placez dans une casserole et ajoutez-y assez d'eau pour les couvrir puis portez à ébullition. Réduisez ensuite le feu et laissez mijoter une vingtaine de minutes jusqu'à ce que la rhubarbe soit compotée. Laissez refroidir.
Récupérez 15cl de jus de rhubarbe et conservez le reste de la compotée pour un autre usage. Battez ensemble le jus avec le sucre et les œufs dans une casserole. Placez sur feu moyen en remuant constamment jusqu'à ce que le mélange épaississe et nappe la cuillère. Retirez du feu puis ajoutez-y le beurre tout en mélangeant. Passez au chinois puis réservez au frais pour au moins 1 heure pour que ça fige.
Préchauffez le four à 180°C. 
Dans un saladier, mélangez ensemble la farine, le sel et la levure chimique. 
Dans un autre saladier, battez le beurre mou et le sucre jusqu'à l'obtention d'une crème légère. Ajoutez l'extrait de vanille et les œufs, battez. 
Dans un mixer, mixez les fraises et le yaourt à la Grecque. 
Versez 1/3 du mélange de farine dans le mélange beurre-sucre-oeufs, puis 1/2 de yaourt et recommencez jusqu'à épuisement des ingrédients. Versez les 2/3 de la pâte dans votre moule, surmontez avec le rhubarb curd, utilisez un couteau pour l'incorporez à la pâte puis versez le restant de pâte. Enfournez pour 1h00 à 1h10 en vérifiant la cuisson avec la pointe d'un couteau (elle doit ressortir sèche). Laissez refroidir au moins 15 minutes avant de démouler.
Au moment de servir, coupez le restant des fraises en deux et placez-les au centre du bundt cake.

So, today's recipe is a Bundt cake that feels like spring, with rhubarb (here rhubarb curd) and strawberry. These two fruits are such a perfect match, that I can't resist cooking them together!!
You will love this bundt cake because it's both tender and soft, and it's so tasty that it's hard to resist!!
My advice: you can keep it at room temperature (without the fresh strawberries) with paper foil to keep it soft. You can keep it 5 days.

Ingredients (for 8 to 10 persons):
For the rhubarb curd:
-8 oz. of fresh rhubarb
-2/3 cup of sugar
-4 oz. of butter
-4 eggs
For the cake:
-3 cups of flour
-2 cups of strawberries + 1 cup for the decoration
-1, 2/3 cups of sugar
-3/4 cups of softened butter 
-1/2 cup of Greek yogurt
-3 eggs
-1 tablespoon of baking powder
-2 teaspoons of vanilla extract
-1 teaspoon of salt
Prepare the rhubarb curd by cutting the rhubarb in thin slices. Put them in a saucepan and cover with water. Bring to a boil and then reduce the heat and let it simmer for about 20 minutes. Let it cool.
Take about 2/3 cup of rhubarb juice (keep the rest for another preparation). Beat together the juice, the sugar and the eggs in a saucepan. Put on a medium heat and stir until it can coat the spoon. Take it out of the heat and add the butter while stiring. Strain and let it cool. Cover and refregirate for at least 1 hour until it's firm.
Preheat the oven at 350°F.
In a bowl, blend toghether the flour, the baking powder and the salt.
In another bowl, beat the softened butter with the sugar to obtain a light and fluffy cream. Add the vanilla extract and the eggs, beat again.
In a mixer, mix toghether the strawberries and the yogurt.
Pour 1/3 of the flour blend in the butter blend, add 1/2 of the strawberry yogurt and continue until you don't have any ingredients left.
Pour 2/3 of the bundt cake batter in the mould, cover with the rhubarb curd and blend it in the batter with a knife. Cover with the rest of the batter. Bake for 1h00 to 1h10, checking the baking with a knife blade. Let the cake cool in the mould for at least 15 minutes before removing from the mould.
Before you serve, cut the rest of the strawberries in half and serve them inside the bundt cake hole.
