Layer cake au praliné
Les layer cake où gâteau à étages sont extrêmement populaire depuis quelques années et reprennent une idée de design de gâteau à l'américaine mais avec des goûts à la française. 
C'est notamment le cas de ce layer cake praliné que j'ai fait avec une base de génoise à la noisette, accompagnée d'une ganache au chocolat praliné, le tout accompagné de pralin caramélisé pour apporter un peu de croustillant. Délicieux, beau et original, ce gâteau est idéal pour tout type de célébration ou tout simplement pour se faire plaisir en famille ou entre amis. A tester absolument!!
Ingrédients (pour 8 personnes):
-200g de pralinoise
-150g de pralin
-120g de sucre + 3 cuillères à soupe
-110g de beurre
-90g de sucre glace
-60g de farine
-60g de poudre de noisette
-4 œufs
-1/2 sachet de levure chimique
-sel
Préchauffez le four à 180°C.
Mélangez la farine, la poudre de noisette et la levure chimique.
Séparez les blancs des jaunes. Battez les blancs avec une pincée de sel et lorsqu'ils sont bien mousseux, ajoutez le sucre (120g) d'un coup et continuez de battre jusqu'à ce que le mélange soit bien ferme et brillant. Tout en continuant de mélanger, ajouter les jaunes d’œufs puis le mélange à base de farine. Continuez à battre environ 1 minute.
Versez l'appareil dans un moule de 20 cm de diamètre et enfournez pour environ 30 minutes. A la sortie du four, démoulez et laissez refroidir sur une grille.
Fouettez le beurre mou et le sucre glace jusqu'à l'obtention d'une pommade. Faites fondre la pralinoise et ajoutez-la au mélange précédent en mélangeant bien jusqu'à l'obtention d'une pâte homogène. Réservez au frais.
Faites caraméliser le pralin en le faisant chauffez à sec avec le sucre restant dans une poêle. Réservez.
Coupez la génoise en trois dans le sens de la longueur. Sur chaque couche de gâteau, étalez la préparation à base de pralinoise avec une spatule puis répartissez du pralin caramélisé, placez une autre couche de génoise par dessus et recommencez l'opération jusqu'au dernier morceau. Placez au frais et sortez au moins 15 minutes avant de servir.

Layer cakes are extremly popular today in France but even though the design remains the same as in the US, the taste is closer to the French pastries.
Indeed, I made this praline layer cake with a hazelnut pound cake, a praline chocolate ganache with some caramelized pralines to bring a little crunc. Delicious, pretty and original, this cake is ideal for all kind of celebration or simply to finish a good meal with familly or friends.
Ingredients (for 8 persons):
-7 oz. of praline chocolate
-5 oz. of praline
-2/3 cup of sugar + 3 tablespoons
-1/2 cup of butter
-3/4 cup of icing sugar
-1/2 cup of flour
-1/2 hazelnut powder
-4 eggs
-1 teaspoon of baking powder
-salt
Preheat the oven at 350°F.
Mix the flour, the hazelnut powder and the baking powder.
Separate the eggs. Beat the whites with a pinch of salt and when there are foamy, add the sugar (2/3) all at once while beating until the whites are ferm and shinny. While beating, add the yolks to the batter as well as the flour mix. Keep beating for about 1 minute.
Pour the batter in a 20 cm diameter mold and cook for about 30 minutes. Once it's out of the oven, remove the cake from the mold and let it cool on a grill.
Whip the softened butter and the icing sugar until you abtain a soft batter. Melt the praline chocolate and add it to the previous batter and mix well until you obtain an homogeneous batter, put aside in the fridge.
Caramelize the praline in a pan with the rest of the sugar. Put aside.
Cut the cake lengthwise in three. On each layer, spread the praline chocolate batter and share the caramelized praline and put a layer of cake above and continue until the last layer of cake. Put in the fridge and let it out 15 minutes before you serve.
