Souple glacée de betterave et sa chantilly de feta
Avec le printemps de retour, j'ai envie de manger plus frais! Alors quoi de mieux qu'une soupe glacée en entrée pour se rafraichir?
La betterave est un légume qui a longtemps été associé à la cantine de notre enfance mais qui, aujourd'hui, fait un retour en force et redevient follement tendance! Sous toutes les formes et avec toutes sortes d'associations, il faut oser l'originalité! 
Ingrédients (pour 2 personnes):
-3 betteraves cuites et pelées
-30cl de crème liquide
-2 cuillères à soupe de vinaigre balsamique
-1 cuillères à café de sirop de vinaigre balsamique
-150g de feta
-sel, poivre
Dans une casserole, versez 15cl de crème liquide avec la feta émiettée et faîtes chauffer à feu doux afin que la feta fonde puis mixez la préparation pour enlever le maximum de morceaux et remettre à chauffer quelques minutes. Laissez refroidir puis filtrer à plusieurs reprise afin qu'il ne reste plus un seul grumeaux et mettre la préparation filtrée dans un siphon à chantilly, mettre une cartouche de gaz et mettre au frais pour au moins 2 heures. Attention, j'insiste sur le fait qu'il ne doit plus rester un seul grumeau car sinon vous ne pourrez pas sortir la crème du siphon, la crème aura certes la consistance d'une chantilly mais il faudra la sortir à la cuillère du siphon!!
Dans un saladier, mettez les betteraves coupées en morceaux et le restant de crème liquide puis mixez. Ajoutez ensuite le vinaigre et le sirop de vinaigre puis salez et poivrez et mixez à nouveau. La préparation ne sera pas complètement liquide mais aura une consistance proche de celle d'un granité. Mettre au frais jusqu'au moment de servir.
Servir dans des grands verres pas trop profond où vous aurez d'abord versez la soupe puis ajoutez la chantilly de feta par dessus avec un peu de poivre fraichement moulu.

Beetroot is a vegetable that has been associated for a long time to our childhood dining hall memories, but today it's making a come-back and is really fashionable! Try every form or association, be original!
Ingredients (for 2 persons):
-3 peeled and cooked beetroots
-1,3 cups of liquid cream
-2 tablespoons of balsamic vinegar
-1 teaspoon of balsamic vinegar syrup
-5oz of feta cheese
-salt, pepper
In a pan, pour half of the liquid cream and the feta cheese in crumbs, heat it on a low heat to melt the feta than mix the preparation to get rid of a maximum of crumbs than re-heat a few minutes. Let it cool of than filter a few times, no lumps must remain! Than pour it into the siphon, put a CO2 cartridge and put it in the fridge for at least 2 hours. Be careful, I insist on the fact that no lumps must remain because if not the cream won't be able to go out of the siphon, it will still have the texture of a chantilly but you will need to take it out of the siphon with a spoon and not the regular way!
In a bowl, put the beetroots cut in pieces and the rest of the liquid cream than mix. Add the vinegar and the vinegar syrup than add salt and pepper, mix again. The preparation won't be completely smooth but it will be grained. Put it in the fridge until you can serve.
Serve it in two big glasses but not too wide, add the feta cheese chantilly above the soup and add some freshly grounded pepper.
