Bundt cake scandaleusement gourmand au chocolat - Dans la cuisine d'Hilary
Cette année, j'ai eu l'honneur de préparer l'un des gâteaux d'anniversaire de mon arrière-grand-mère qui fêtait ses 97 ans!! Pour l'occasion, j'ai voulu lui faire plaisir avec ce qu'elle préfère : du chocolat! 
Souhaitant un effet wahoo mais aussi et surtout un vrai bon gâteau, j'ai tout de suite pensé au Bundt cake que j'ai essayé et adopté l'année dernière (fraise-rhubarbe et citron-framboise)! Comme toujours, le gâteau est particulièrement moelleux, tendre et surtout il n'est pas du tout sec!
Et puis, comme nous sommes tous de sacrés gourmands, j'ai poussé le vice jusqu'au bout en glaçant également le gâteau avec un glaçage miroir au cacao que j'ai décoré avec des billes aux trois chocolats. A la fois esthétique et tellement gourmand!
Mon astuce: décorez immédiatement le gâteau après avoir posé le glaçage car celui-ci fige très vite!

Ingrédients (pour 10 à 12 personnes):
Pour le bundt cake:
-280g de farine
-250g de sucre + 30g
-220g de chocolat noir à 70%
-20cl de lait
-120g de beurre
-4 œufs
-4 cuillères à soupe de cacao
-1 sachet de levure chimique
-1 cuillère à café d'extrait de vanille
Pour le glaçage miroir au cacao:
-190g de sucre
-130g de crème liquide
-60g de cacao en poudre (sans sucre ou très peu sucré)
-4 feuilles de gélatine
-7cl d'eau
-billes croustillantes aux 3 chocolats (optionnel)
Préchauffez le four à 160°C.
Coupez le chocolat en morceaux et placez-le dans un bol avec le beurre coupé en morceaux et faites fondre au micro-ondes.
Pendant ce temps, séparez les blancs des jaunes. Fouettez les jaunes et 250g de sucre jusqu'à ce que le mélange blanchisse et double de volume. Ajoutez le lait, la farine, la levure et le cacao, mélangez bien jusqu'à l'obtention d'une pâte homogène et sans grumeaux. Ajoutez le mélange chocolat-beurre puis l'extrait de vanille et mélangez à nouveau. Battez les blancs en neige bien ferme, lorsqu'ils commencent à être ferme, ajoutez les 30g de sucre. Incorporez délicatement avec une spatule au mélange précédent.
Versez l'appareil dans le moule à bundt cake préalablement huilé. Enfournez pour 1h10 en remontant le four à 180°C pour les 15 dernières minutes. Pensez à bien tester la cuisson avec la pointe d'un couteau, elle doit ressortir sèche.
A la sortie du four, laissez refroidir 15 minutes avant de démouler délicatement.
Préparez le glaçage. Faites ramollir les feuilles de gélatine dans un bol d'eau froide.
Mélangez ensemble le sucre et le cacao dans une casserole. Fouettez en ajoutant progressivement l'eau puis la crème liquide (pour éviter les grumeaux). Placez sur feu doux en mélangeant. Aux premiers bouillons, retirez du feu puis placez les feuilles de gélatine égouttées et mélangez jusqu'à ce qu'elles fondent complètement. Versez dans un bol avec un bec et laissez complètement refroidir.
Lorsque le glaçage sera à température ambiante, placez le gâteau sur une grille avec un réceptacle en dessous afin que le glaçage y coule. Versez le glaçage délicatement sur le bundt cake en n'hésitant pas à utiliser un pinceau. Décorez avec les billes chocolatées.
Placez au frais mais sortez le gâteau au moins 3 heures avant de déguster!

This year, I was really proud to make one of the birthday cakes for my great-grand-mother, who celebrated her 97th birthday! For the occasion, I really wanted to make her happy with her favorite thing: chocolate! Since I wanted my cake to impress and to be divine, I instantly thought about a Bundt cake, a recipe that I tried and adopted last year (with a strawberry and rhubarb Bundt and a lemon and raspberry Bundt)! As always, this cake is just so soft and tender, and never dry!!
And since we are all big chocolate fans in the family, I even decided to cover the cake with a chocolate icing, decorated with mini chocolate balls. Both pretty and so greedy!!
My advice : decorate the cake as soon as you ice it because it dries quite quickly! 
Ingredients (for 12 persons):
For the bundt cake :
-2, 1/3 cups of flour
-1, 1/4 cups of sugar + 2 tablespoons
-7,7 oz. of dark chocolate
-4/5 cup of milk
-1/2 cup of butter
-4 eggs
-4 tablespoons of cocoa
-1 tablespoon of baking powder
-1 teaspoon of vanilla extract
For the chocolate mirror icing :
-1 cup of sugar
-4,6 oz. of liquid cream
-1/2 cup of cocoa (with no sugar or low sugar)
-4 gelatine leaves
-1/4 cup of water
-crunchy mini chocolate balls
Preheat the oven at 320°F.
Cut the chocolate in pieces and put it in a bowl with the butter and melt in the micro-wave.
Meanwhile, separate the egg whites from the yolks. Whisk the yolks with 1, 1/4 cups of sugar until it starts to whitten and double its volume. Add the milk, the flour, the baking powder and the cocoa, whisk until you obtain a homogeneous batter without lumps. Beat the egg whites until stiff, when they are firm, add the rest of the sugar. Incorporate delicately to the previous batter.
Pour the batter into the bundt cake mould, previously oiled. Bake for 1h10, putting the oven at 360°F for the last 15 minutes. Test if the cake is baked with a knife. 
Once it's out of the oven, let it cool for 15 minutes before removing from the mould delicately.
Prepare the icing. Soften the gelatin leaves in cold water.
Mix together the sugar and cocoa in a saucepan. Add progressively the water and liquid cream while whisking (to avoid lumps). Put on a medium heat and keep stirring. Once it starts to bubble, remove from the heat and add the gelatin leaves previously drained and stir until they have melted. Pour into a mould with a lip and let it cool completely.
Once the icing is at room temperature, put the cake on a grill with a platter under so that the icing can run. Pour the icing delicately on the cake, don't hesitate to use a brush. Decorate with chocolate balls.
Put in the fridge, but take the cake out at least 3 hours before you serve.
