Angel cake au citron vert et basilic léger et savoureux - Dans la cuisine d'Hilary
Prêt à tester un dessert léger comme un nuage et particulièrement savoureux?? Cet Angel cake porte particulièrement bien son nom car avec le mélange de basilic et de citron vert, vous allez vite partir au paradis! J'avais déjà craqué auparavant sur la légèreté des Angel cakes (recette ici) et là encore, je suis conquise. C'est pour moi le dessert parfait pour finir un repas en légèreté surtout par temps chaud!
Le gâteau au citron vert est léger comme une plume grâce aux blancs en neige et est accompagné d'une crème au basilic et au citron vert qui le rend tellement plus gourmand... Difficile de résister!
Mon astuce: le colorant est optionnel, il permet de rappeler la couleur du citron vert et du basilic lorsque vous y plongez la cuillère!

Ingrédients (pour 6 personnes):
Pour le gâteau:
-6 blancs d’œuf
-90g de sucre
-90g de farine
-60g de lait
-40g d'huile neutre
-1 citron vert bio
-1 cuillère à café de levure chimique
-1 pointe de colorant gel vert
-1 pincée de sel
Pour la crème:
-200g de cream cheese
-1 citron vert bio
-30g de sucre
-2 branches de basilic + pour la décoration
Préchauffez le four à 160°C.
Préparez les gâteaux en commençant par zester le citron puis pressez le jus du citron vert, filtrez.
Dans un saladier, mélangez le jus de citron vert, l'huile et le lait. Ajoutez la farine, le sel, la levure et les zestes. Mélangez bien.
Fouettez les blancs en neige ferme (mais pas trop) et ajoutez-y le sucre en trois fois et terminez par le colorant. 
Incorporez un quart des blancs d’œufs dans le saladier puis ajoutez le reste progressivement et très délicatement à la Maryse afin de ne pas casser les blancs. 
Préparez des cercles à pâtisserie en les graissant légèrement avec de l'huile puis placez sur une plaque avec du papier sulfurisé. Remplissez les moules aux 3/4 afin qu'ils ne débordent pas puis enfournez pour 25 minutes.
Pendant ce temps, préparez la crème en battant le cream cheese avec le jus de citron vert et le sucre jusqu'à l'obtention d'une crème. Émincez très finement le basilic puis incorporez-le à la crème. Placez dans une poche à douille.
À la sortie du four, basculez les moules sur le côté afin de faire refroidir puis démouler très délicatement. Creusez un trou au centre de chaque gâteau puis remplissez avec la crème. Avec le reste de crème, décorez les gâteaux, ajoutez des feuilles de basilic. Servez rapidement.

Are you ready to taste a dessert as light as a feather and really tasty? This Angel cake really has the right name because with the basil and lime blend, you are going straight to heaven!! I already tried Angel cakes before (recipe here) and again, I am in love with this dessert! It's the perfect dessert to finish lightly a nice meal, which is particularly appreciated with this warm weather!
The lime cake is so light thanks to the egg whites and it's served with a basil and lime cream that makes it so much greedier... I can't resist!!
My advice: the color is optional, it's just to have the color of the lime and the basil inside the cake when you plunge your spoon inside!! 

Ingredients (for 6 persons):
For the cake:
-6 egg whites
-3/4 cup of flour
-1/2 cup of sugar
-2 fl. oz. of milk
-1,3 fl. oz. of neutral oil
-1 organic lime
-1 tspof baking powder
-1 pinch of green colouring
-1 pinch of salt
For the cream:
-7 oz. of cream cheese
-1 organic lime
-3 tbs of sugar
-2 branches of basil + more for the decoration
Preheat the oven at 320°F.
Prepare the cakes, start by zesting the lime and press the juice, filter.
In a salad bowl, stir the lime juice, the oil and the milk. Add the flour, the salt, the baking powder and the zest. Whisk well.
Whisk the egg whites, they mustn't be too stiff, and add the sugar in three times and finish by the colouring. Incorporate 1/4 of the egg whites, stir and add the rest progressively and delicately with a spatula so you won't break them.
Prepare the culinary circles, brush them with a little bit of oil and put them on a baking tray with baking paper. Share the batter in the circles, at the 3/4 of the circles and bake for 25 minutes.
Meanwhile, prepare the cream by beating the cream cheese with the juice of the other lime and with the sugar until you obtain a fluffy cream. Mince thinly the basil and incorporate into the cream. Put into a pastry bag.
Once the cakes are out of the oven, let them cool by putting them on a grill, on the spine of the circles and then remove them delicately.Make a hole inside each cake and fill with the cream. With the rest of the cream, decorate the cake, add a basil leaf. Serve quickly.
