British fever : Oeufs Bénédicte / British fever : Benedict eggs

Il y a peu, je vous avais dit avoir préparé un brunch à l'anglaise pour changer un peu, était-ce à cause de la British fever qui règne depuis la naissance de la petite princesse...? Parmi les recettes que j'ai préparé, j'avais notamment préparé des muffins pour les manger tels quels mais également afin de préparé des œufs Bénédicte, une recette avec également du bacon, un œuf poché et de la sauce Hollandaise. Ce mélange est tout simplement sublime pour le brunch et lorsque le jaune de l’œuf poché se mélange à la sauce Hollandaise, c'est tout simplement délicieux! 
J'ai ajouté dans la sauce Hollandaise un peu de ciboulette, ma petite touche perso en somme, car je trouve que ça apporte un peu plus de goût! Si jamais vous avez trop de sauce, vous pouvez la placez dans des cubes à glaçons au congélateur pour une utilisation ultérieure!
Ingrédients (pour 6 personnes):
-6 muffins Anglais (recette ici)
-150g de beurre
-12 tranches de bacon (le rond)
-6 œufs
-2 jaunes d’œufs
-1 citron
-2 cuillères à soupe d'eau
-1 cuillère à soupe de ciboulette émincée
-poivre, sel
Préchauffez le four à 200°C.
Faites griller les tranches de bacon au four. Coupez les muffins en deux et passez-les quelques minutes au four.
Préparez la sauce Hollandaise en faisant bouillir une casserole d'eau. Battez les jaunes d’œufs dans un cul de poule avec l'eau puis placez-le sur la casserole d'eau bouillante jusqu'à ce que le mélange épaississe mais reste pour autant liquide. Ajoutez progressivement le beurre en morceau tout en mélangeant vigoureusement pour qu'il fonde et s'incorpore bien. Salez et poivre.
Pressez le citron et ajoutez le jus hors du feu. Ajoutez ensuite la ciboulette émincée, mélangez. Réservez au chaud.
Faites pocher les œufs deux par deux dans une une casserole d'eau vinaigrée très chaude (lorsqu'elle bout, baissez le feu afin que l'eau reste très chaude mais qu'il n'y ait plus de bouillonnements pour ne pas perturber le pochage!). Laissez cuire 3 à 4 minutes selon vos préférence.
Dressez l'assiette en plaçant une moitié de muffin avec deux tranches de bacon par-dessus puis recouvrez avec un œuf poché. Nappez de sauce Hollandaise puis placez l'autre moitié de muffin à côté. Servez aussitôt.

Not so long ago, I told you that I prepared an English brunch to change a little, was it because of the British fever that reigns since the birth of the little princess....? Among the recipes I prepared, I baked some English muffins to eat them with jam, but also to prepare some eggs Benedict, a recipe made with bacon, a poached egg and a Hollandaise sauce. This is simply sublime for the brunch and when the yolk blends with the Hollandaise sauce, it's to die for!
I added some chive into my Hollandaise sauce, my personal touch, to bring a little more taste! If you have too much Hollandaise sauce, you can put it into an ice-tray and in the freezer to use another time!
Ingredients (for 6 personnes):
-6 English muffins (recipe here)
-5 oz. of butter
-12 slices of Canadian bacon
-6 eggs
-2 egg yolks
-1 lemon
-2 tablespoons of water
-1 tablespoon of minced chive
-pepper, salt
Preheat the oven at 390°F.
Grill the slices of bacon in the oven. Cut the English muffins in half and grill them a few minutes in the oven.
Prepare the Hollandaise sauce by bringing water to a boil. Beat the egg yolk in a mixing bowl with the water and then put it above the boiling water until the batter thickens but still stays liquid. Add progressively the dices of butter while beating vigorously until it melts and it's well incorporated. Season with salt and pepper.
Press the lemon and add the juice to the batter previously removed from the heat. Add the minced chive, mix. Put aside (it must stay warm).
Poach the eggs, two by two in a casserole of very hot water and vinegar (once the water has boiled, lower the heat so the water stays hot, but there aren't bubbles to be sure the eggs will poach properly). Let them cook 3 to 4 minutes regarding your preferences.
In the plate, put the lower part of the muffin, add two slices of bacon above and the poached egg. Coat with the Hollandaise sauce and put the other half of the muffin besides. Serve immediately.
