Ma version du cheesecake fraise-rhubarbe de Christophe Michalak
Il y a peu, à la recherche d'une recette de cheesecake à la fraise et à la rhubarbe, je suis tombée sur la fameuse recette que Christophe Michalak (mon idole!!!) avait présenté dans l'émission "Le gâteau de mes rêves" sur Téva et bien entendu j'ai tout de suite voulu la tester... Après avoir analysé ladite recette, j'ai décidé d'y apporter ma touche personnelle en faisant un biscuit à base de spéculoos plutôt que d'utiliser un palet breton. En effet, j'adore l'association du spéculoos avec la rhubarbe mais aussi avec la fraise!! Je me suis également permise de réduire la quantité de chantilly car elle était bien trop importante pour la quantité de cheesecake.
Le résultat fut bien entendu à la hauteur de mes espérances, un vrai régal à la fois frais, gourmand et terriblement régressif... Un dessert comme je les aime!!
Ingrédients (pour 6 personnes):
-450g de cream cheese
-15cl de crème liquide
-200g de rhubarbe
-200g de fraises
-150g de spéculoos
-130g de sucre
-100g de mascarpone
-90g de cassonade
-70g de beurre
-30g de crème épaisse
-5g de farine
-2 œufs
-1 citron vert
-1 gousse de vanille
Préchauffez le four à 180°.
Passez les spéculoos au mixeur pour les réduire en poudre. Faites fondre le beurre et ajoutez le à la poudre de biscuit, mixez afin d'obtenir une consistance sableuse. Répartissez au fond des six moules et tassez bien avec un pilon par exemple. Enfournez 10 minutes puis laissez refroidir. Réduisez le four à 80°C.
Pendant ce temps, mélangez le cream cheese avec la crème épaisse, ajoutez-y les œufs, la farine et le sucre et battez jusqu'à l'obtention d'un mélange homogène. Versez dans les moules sur la base au spéculoos et enfournez pour environ 30 minutes. A la sortie du four, laissez refroidir puis couvrez et placez au réfrigérateur pour 12 heures.
Préparez la compotée rhubarbe-fraise en épluchant et coupant en dés la rhubarbe, faites la suer puis compoter avec 60g de cassonade. Lorsque la rhubarbe est bien tendre, ajoutez-y les fraises préalablement équeutées et coupées. Laissez bouillonner 2 minutes puis réservez au frais.
Préparez la chantilly en battant à l'aide d'un robot la crème liquide, la mascarpone, la cassonade restante, les graines de la gousse de vanille et le zeste du citron vert. La chantilly doit être bien ferme. Réservez au frais.
Placez le cheesecake dans une assiette et placez y une belle cuillerée de compote puis une cuillerée de chantilly. Servez aussitôt.

Not so long ago, I was looking for a rhubarb and strawberry cheesecake recipe and I found the famous recipe for the pastry chef Christophe Michalak, so of course I wanted to try it... After I read the recipe, I decided to bring my personal touch and make a biscuit made with speculoos cookies instead of a short bread. Indeed I love the association of speculoos with rhubarb but also with strawberries!! I also decided to reduce the quantity of chantilly because it was too much for this recipe.
The result was incredibly good, fresh and so regressive... 
Ingredients (for 6 persons):
-16 oz. of cream cheese
-1/2 cup of liquid cream
-7 oz. of rhubarb
-7 oz. of strawberries
-5 oz. of speculoos cookies
-2/3 cup of sugar
-3,5 oz. of mascarpone
-3 oz. of brown sugar
-1/3 cup of butter
-1 oz. of thick cream
-1 teaspoon of flour
-2 eggs
-1 lime
-1 vanilla pod
Preheat the oven at 350°F.
Put the cookies in a blender to obtain crumbs. Melt the butter and add it to the cookie powder and mix until you obtain a sandy batter. Share it at the bottom of six molds and press so it can be compact. Cook for 10 minutes and let it cool. Reduce the heat at 180°F.
Meanwhile, whisk the cream cheese with the thick cream, add the eggs, the flour and the sugar and whisk until you obtain an homogeneous batter. Pour into the molds above the dough and cook for 30 minutes. Once it's out of the oven, let it cool then cover and put in the fridge for 12 hours.
Prepare the rhubarb and strawberry purée by peeling and cutting in dices the rhubarb, cook it with 2 oz. of brown sugar. Once the rhubarb is tender, add the strawberries previously tailed and cut. Let it bubble 2 minutes and put aside in the fridge.
Prepare the chantilly by whisking with a whisk the liquid cream, the mascarpone, the rest of the brown sugar, the vanilla seeds and the lime zest. The chantilly must be firm. Put aside in the fridge.
Put the cheesecake on a plate, put a tablespoon of rhubarb and strawberry purée and then a tablespoon of chantilly. Serve immediately.
