[Escapade au Liban] Falafels et crème tarator / [Lebanese escapade] Falafels and tarator cream

Falafels et crème tarator
La gastronomie libanaise est une cuisine à laquelle je suis particulièrement sensible grâce à ses saveurs qui me font voyager! Il y a peu, j'ai réalisé un repas entièrement libanais pour mes invités afin de leur faire partager mon amour de la cuisine libanaise et désormais je vous partage mes recettes pour que vous aussi vous puissiez vous évader.
Je commence par les traditionnels falafels, ces boulettes au pois chiches et leur crème tarator qui vont vous dépayser dès la première bouchée...
Ingrédients (pour 25 falafels):
-400g de pois chiches secs
-3/4 de botte de persil
-1 oignon jaune
-1 citron
-4 gousses d'ail
-1/2 verre d'eau
-3 cuillères à soupe de crème de sésame
-2 cuillère à soupe de farine
-2 cuillères à café de coriandre moulue
-1 cuillère à café de cumin moulu
-1 cuillère à café de bicarbonate de soude
-1 cuillère à café de sel
Faites tremper les pois chiches secs toute une nuit. Lorsque les pois chiches seront réhydratés, séchez les bien attentivement car s'ils sont trop humides les falafels se déliteront pendant la cuisson.
Placez les pois chiches dans un mixer avec l'oignon et 2 gousses d'ail préalablement coupé, le persil, la coriandre et le cumin. Mixez à pleine puissance jusqu'à l'obtention d'une pâte assez homogène. Transvaser dans un saladier.
Dans un bol, mélangez la farine, le bicarbonate et le sel puis incorporez dans le mélange précédent. Laissez reposer environ 30 minutes.
Pendant ce temps, préparez la sauce tarator en écrasant les gousses d'ail restant afin d’obtenir une fine purée, ajoutez-y le jus de citron puis la crème de sésame et ensuite délayez avec de l'eau jusqu'à l'obtention d'une sauce souple.
Façonnez des boules de taille égale avec la pâte à falafel.
Faites chauffer l'huile de friture puis faites frire les falafels jusqu'à ce qu'ils obtiennent la couleur souhaitée, pour moi un doré qui vire sur le marron puis régalez-vous!!
Falafels et crème tarator
The Lebanese gastronomy is a cuisine that I really love because of its delicious flavors that always make me travel far away! Not so long ago, I made an entire Lebanese meal for my guests to share with them my love for the Lebanese cuisine and now I share the recipes with you so that you can travel with me.
I will start with the traditional falafels, those chick-peas balls and their tarator cream that will please you at the first mouthful...
Ingredients (for 25 falafels):
-14 oz. of dry chick-peas
-3/4 bunch of parsley
-1 yellow onion
-1 lemon
-4 garlic cloves
-1/2 glass of water
-3 tablespoons of tahini
-2 tablespoons of flour
-2 teaspoons of grounded coriander
-1 teaspoon of grounded cumin
-1 teaspoon of baking soda
-1 teaspoon of salt
Soak the chick peas all night long. Once there are rehydrated, dry them carefully because if there are humid, the falafels won't cook correctly.
Put the chick peas in a mixer with the onion and 2 garlic cloves previously cut, add also the parsley, the coriander and the cumin. Mix until you obtain an homogeneous batter. Put in a bowl.
In another bowl, mix together the flour, the baking soda and the salt and incorporate to the previous batter. Let it rest for at least 30 minutes.
Meanwhile, prepare the sauce tarator by mincing the rest of the garlic until it's a fine purée, add the lemon juice and the tahini and then dilute with the water until you obtain a smooth sauce.
Make equal sized balls with the falafel dough.
Warm the cooking oil and fry the falafel until they look light brown and then eat them with the sauce!!
