Travers de porc caramélisés
Les travers de porc m'évoquent toujours les USA et les barbecues en plein air, de grands moments de nostalgie en somme. Comme j'aime cette viande que je trouve très goûteuse, j'ai voulu reproduire le goût de barbecue avec une marinade pour caraméliser la viande mais avec les moyens à ma disposition (je n'ai malheureusement pas de barbecue). 
Un vrai régal qui vous fait oublier le mode de cuisson!
Ingrédients (pour 2 personnes):
-400g de travers de porc
-2 cuillères à soupe de sauce soja
-2 cuillères à soupe de miel
-1,5 cuillères à soupe de concentré de tomate
-1 cuillère à soupe de vinaigre balsamique
-1 cuillère à soupe d'huile d'arachide
-1 cuillère à café de gingembre râpé
-1 gousse d'ail
-poivre
Préchauffez le four à 180°C.
Dans une cocotte allant au four, faites frémir l'huile d'arachide. Épluchez et émincez la gousse d'ail puis faîtes la revenir dans la cocote. Coupez votre travers de porc en les séparant puis faites-les revenir à peine 5 minutes dans la cocotte en les tournant afin qu'ils soient bien dorés.
Pendant ce temps, mélangez le reste des ingrédients - sauf le poivre - dans un bol. Poivrez la viande puis versez la marinade par dessus en enrobant bien les travers.
Enfournez pour 20 minutes à couvert. Lorsque le temps est écoulé, vérifiez que la sauce ne soit pas trop réduite sinon ajoutez quelques cuillères à soupe d'eau puis prolongez la cuisson à découvert pour 20 minutes supplémentaires.
Servez chaud en nappant les travers de sauce.

Pork ribs always remind me of the USA and the barbecues outside, so much nice memories… Because I love this meat that I find really tasty, I decided to try and have the same barbecue taste with a marinade that would caramelize the meat but with what I have at home (I don’t have a barbecue).
A real treat that will make you forget how it was cooked!!
Ingredients (for 2 persons) :
-14 oz. of pork ribs
-2 tablespoons of soy sauce
-2 tablespoons of honey
-1,5 tablespoons of tomato concentrate
-1 tablespoon of balsamic vinegar
-1 tablespoon of peanut oil
-1 teaspoon of minced ginger
-1 garlic clove
-pepper
Preheat the oven at 350°F.
I a casserole dish that you can put in the oven, heat the oil. Peel and mince the garlic and cook it in the casserole. Cut the ribs and brown them in the casserole 5 minutes so they can be golden on both sides.
Meanwhile, mix all the other ingredients – but not the pepper – in a bowl. Put pepper on the meat and add the marinade on top and coat the meat.
Put in the oven for 20 minutes with the lid. Once the time is up, check to see if the sauce hasn’t reduced too much, if it’s the case add a few tablespoons of water, and extend the cooking for 20 more minutes without the lid this time.  
Serve hot and coat with the rest of the sauce.
