There is nothing better than a nice cake to finish your meal or for tea time! I am a gourmet and I really adore every kinds of lemon deserts! But something that always bothered me is that lemon cake is too dry and not really tasty... so after a lot of experience to find the perfect recipe that would be both smooth and really tasty, here is my recipe! The secret of the taste is to pour the lemon juice once the cake is out of the oven and it's smooth thanks to the creme fraiche! The real plus is the poppy seeds which are both subtle and crunchy in the cake. What a relief!
Ingredients:
-1, 1/4 cup of flour
-1 cup of sugar
-2/5 cup of butter
-1/4 cup of creme fraiche
-3 eggs
-2 lemons
-1 teaspoon of baking powder
-1,5 tablespoons of poppy-seeds
Preheat the oven at 330°F. Zest the two lemons and squeeze them.
In a big bowl, mix together the eggs, the zest and 4/5 cup of sugar. Add the creme fraiche and mix well than add the flour and baking powder and whisk until you obtain a homogeneous batter. Than melt the butter and once it's warm, add it to the preparation with 1/4 cup of lemon juice and poppy seeds than mix.
Pour the batter in a anti-adhesive cake mold and bake for 50 minutes.
When the cake is out of the oven, boil the rest of the lemon juice with the rest of the sugar. Turn out the cake and place it on a grill than pour the lemon juice.
